Do any of you do summer school? What sort of curriculum do you use? What do you do for summer?

I have found that it is hard to do regular homeschool during the summer. For one thing, I need a break to get projects done and to plan for next year. Also, there are so many extra activities going on, trips, and other school children's schedules are free.
I came up with a plan that didn't require much of my time.
Our general requirement during the summer was this:
One math lesson (we used Saxon)
One hour of reading
One selection of memory work
Bible reading and prayer
Chores
When things came up, I didn't feel guilty to cancel these requirements, but when we were home, these basics were expected. It only took about 2 hours.
Also, I might take some time over the summer to work one-on-one with any child that was having a hard time with a subject or skill .
