I need to find an eggplant recipe that my kids will actually try to taste. As in "kids" I mean 13 to 25 years old. I have made Parmesan, but they really didn't care. I ate the leftovers for a week.
I can't let all the eggplant in my garden go to waste and I can't eat it all. What I might do is just find recipes that my husband and I like (or just me), make and freeze in small serving containers.
Maybe someone has a favorite eggplant recipe to share.
