Depending on your state, you should be able to unschool and keep a portfolio.
I do evaluations and have met unschooling families. They keep book lists, pictures of the children's projects or projects themselves, brochures from special trips, etc...Some writing samples like a letter to grandma..story..and so forth.
As for workbooks, they absolutely CAN be a part of unschooling. It's not about the tools as it is so much about the method. If her daughter likes workbooks and chooses to do one, that's still unschooling.
